Monday, October 14, 2013 Recipe: Easy Pumpkin Bars
EASY PUMPKIN BARS

1/3 c. sugar
1/3 c. oil
3 eggs
1 (15 oz.) can pumpkin (2 cups)
1 pkg. yellow cake mix (with pudding in it)
3 tsp. pumpkin pie spice (or 2 tsp. cinnamon, ½ tsp ginger, ½ tsp nutmeg & ½ tsp cloves)

Grease and flour 15x10 inch jelly roll pan. In large bowl combine sugar, oil, eggs, and pumpkin for 1 minute at high speed. Add cake mix, spices and blend until moist. Beat 2 minutes at high speed. Pour into pan and bake at 350 degrees for 25-35 minutes until a toothpick inserted into center comes out clean. Cool & frost.

CREAM CHEESE FROSTING

1 (3 oz) pkg. cream cheese
½ c. butter or margarine, softened
1 tsp. vanilla
2 c. sifted powdered sugar
 
Cream together the cream cheese and butter. Stir in vanilla. Add powdered sugar, a little at a time, beating well until mixture is smooth. Spread over bars. Sprinkle with chopped nuts.
