Unusual, nutty flavor, with water chestnut texture. Eat raw in salads, or add to Oriental foods at the last minute of cooking. Can be cooked like potatoes for a starch substitute. Excellent for diets - only 8 calories per 4 oz. serving. They grow and store like potatoes. Plants grow 6-10' tall and 3-5' wide. Blooms August through September. #1 grade tubers. Grow Jerusalem Artichokes in full sun in well-drained soil. Plant whole tubers or cut larger ones into pieces with 2-3 eyes. Dig furrow 4" deep and space tubers 12-18" apart with 3' between rows. When shoots emerge, mound soil around plants. Harvest after first frost. Ships March 1 through mid-May at the right planting time for your area. 1 lb.
